vegan apple cinnamon muffins

I love autumn. Even if you've only known me a month you will know Autumn is my favourite time of year. I also love apples. And apple picking. And making cider. Sam and I went apple picking the other and bought a lot of apples to make some cider. even after pressing a bottle full of now fermenting cider we have a lot of apples left. This vegan apple cinnamon muffin recipe if a great way to enjoy some of autumns gifts. 


ingredients: 
2 small/medium apples, chopped small
1 tbsp of brown sugar 
2 tsp of Cinnamon
1/2 tsp of Nutmeg

1 1/2 cups of Self Raising Flour
1/2 cup of brown sugar 
1/3 cup of caster sugar 
1 tsp of baking powder
1/2 tsp of bicarbonate soda
1/2 cup of oats
1/2 cup of oil
1/2 cup of apple sauce 

glaze: 
1 tbsp of butter
2 tbsp of brown sugar 
2 tsp of Cinnamon
3-4 tbsp of plain flour


1. Line your muffin tray with cases and preheat the oven to 150°c

2. Add the cinnamon, nutmeg brown sugar and diced apples to a pan and zimmer for a few minutes till the apples go soft. Leave them to cool while you get the rest of the ingredients ready. 

3. Mix the flours, sugars, baking powder, soda and oats in a bowl together. Then add the oil and apple sauce. 

4.Mix in the apples it with the rest and put the bowl in the fridge for 10 minutes. This will stop the mix from sinking.

5.After their time in the fridge, put the batter into the cases and place in the over for 15 minutes, or until golden brown.

6. For the glaze, melt the butter and sugar and cinnamon and pan. Once melted, sieve the flour in to it to thicken.
